Guacamole

This simple side, is not only tasty, but packs a nutritional punch too. Avocados contain around 20 different vitamins and minerals and, interestingly, contain more potassium than your average banana! They are rich in monounsaturated fatty acids, mainly oleic acid. Most researchers are agreed that the high levels of monounsaturated fat in avocado—especially oleic acid— have heart-related benefits.

Ingredients

  • ½ a Small red onion
  • ½ a Fresh red chilli
  • 3 ripe avocados
  • 1 bunch of fresh coriander chopped
  • 6 ripe cherry tomatoes
  • Juice from 1 Lime
  • Dash of Extra virgin olive oil
  • Salt and Pepper to taste

Instructions

Use a small blender or a pestle and mortar to pound the chillies, coriander, tomatoes, salt and onion to a fine paste. Add a little water and lime juice to make a looser mixture. Blend or mash in the avocados.
