Satay sauce – what a dream! Some recipes can be quite oily so I came up with this one as a slightly healthier alternative that is just as tasty!

- 1 Tsp Sesame Oil
- 1 Onion finely chopped
- 2 Garlic Cloves crushed
- Small knob of ginger finely grated
- Half a red chilli finely chopped - use your judgement on this dependent upon how hot the chili is!
- 100g Whole Earth crunchy peanut butter
- 75g Natural Yoghurt
- 2 Tbsp Soy Sauce
- 1 Tbsp sweet chilli sauce
- 1 Tbsp Coconut cream (from the top of the can or carton)
Pop the oil in a pan and fry off the onions over a medium heat for about 5 minutes, moving around the pan. Add the chopped chilli, garlic and ginger and stir, turning the heat down slightly and cooking for a further 5 minutes.
Once all cooked off, add the peanut butter to the pan, moving around until it softens slightly, then add the soy sauce, coconut cream and sweet chilli sauce. Stir well and then take off the heat. Set aside to cool slightly.
Once cooled pop in a bowl and add the natural yoghurt, stir well, and taste test to check heat and sweetness. If you think it needs a little more heat, carefully add a little chilli powder or flakes. You can also sweeten it with a little honey if you think it needs it.
This is gorgeous served with summer rolls or just vegetable crudites.
