Smashed minted peas and avocado on sourdough is a super simple and tasty lunch dish. Peas are often overlooked when looking for nutritious veggies, but they actually have an exceptionally strong nutrient composition. Not only that, they are a really tasty spring vegetable now in the peak of the season. This is the time when the fresh ones have the best flavour and are usually the least expensive. Green peas are a very good source of vitamin K, vitamin B1, copper, vitamin C, phosphorus, dietary fibre, and folate.

- 150g Peas
- Handful of Fresh Mint
- Half and Avocado
- Salt and Pepper
- 2 Slices of Sourdough
- Extra Virgin Olive Oil
Cook the peas in boiling water, rinse well and cool in cold water. Add them to the blender with the mint, seasoning and olive oil. Whizz up until they are roughly smashed – not too smooth. Transfer to a bowl and mash in the avocado. Lightly toast the bread and top with the tasty green mixture. Serve up with tomatoes.
