Overnight oats is a healthy breakfast idea that is good for the cooler months, can be served up if you are in a rush and doesn’t cost the earth. I have come up with a few different flavours to add some variety. The basic oat, plant milk, and yoghurt recipe can be dressed up with any flavours and toppings you choose. Here is one of my favorites, a coconut version.
Coconut Overnight Oats. Vegan. GF (Buy Oats labelled Gluten Free)Print This
- 250g Jumbo Porridge Oats (choose GF version if avoiding gluten)
- 250ml Plant Milk - I used Rude Health coconut milk alternative here, but you can use almond or oat too.
- 100ml Greek Yogurt - use a coconut variety for more flavour
- 1 Tbsp Desiccated coconut
- 2 Tbsp Maple Syrup
- To Serve:
- Mixed Seeds
All you need to do is mix all the ingredients together and pop them in an airtight container in the fridge overnight to allow the oats to absorb all the liquid.
Serve up with berries and top with seeds. You can use a little more yogurt if you fancy it.
