Mean Green Soup

Yes it’s green! And, Yes! It tastes delicious! The addition of a little yeast extract adds an extra dimension to the flavour. Really quick and souper simple 🙂

  • 1 Tbsp Olive Oil
  • 1 Leek washed and chopped
  • 2 Garlic cloves crushed
  • 3 Handfuls of fresh or frozen peas
  • 100g Spinach
  • 800ml Vegetable stock
  • Squeeze of Lemon Juice
  • 1 Tsp Marmite (You could use other yeast extract like Meridian)
  • Salt and Pepper


Heat up the oil in a wok or similar size heavy based pan and add the garlic and the chopped leek. Sweat until the leek is translucent. Add the peas to the pan and cook for 3 minutes. Prepare the stock by pouring hot water over your chosen stock cube and add a good teaspoon of yeast extract, stir to melt both down. Add the liquid to the pan and season well with salt and pepper.

Bring to the boil and simmer for 5 minutes, then take off the heat and blend the soup. You can do this by pouring the liquid into a blender jar and whizzing up adding a handful of spinach at a time. The warm liquid will cook the spinach as it is mixed in. Once the liquid is blended, add a good squeeze of lemon juice, mix in and pour out into a warm bowl to serve. It’s truly tasty!
