Spring Greens

This is lovely way to cook greens. Very simple, and the lemon and seasoning brings out the best in the cabbage. The key to cooking any veg is to keep a bite to it and avoid immersing in water wherever possible to maintain the nutritional value. Steaming, light frying, roasting and eating them raw are the best options.

  • 1 Spring Cabbage sliced
  • 1 Tbsp Olive Oil
  • Squeeze of lemon juice
  • Herbs - use whatever compliments your main dish
  • Salt and Pepper


Pop your cabbage in a mixing bowl, season well and mix in the herbs (I use coriander and a little mint to go with the Mole), pour over the oil and massage into the leaves. Gently heat a dash more oil in a large frying pan and place the cabbage into the pan and cook for about 15 -20 minutes until it’s just tender and still a little crunchy. Squeeze the lemon over to serve.
