Colourful Coleslaw

This colourful coleslaw is beautiful to look at and is a great dish for cardiovascular protection – packed with antioxidants from the red cabbage, beets and carrots.  Beetroot is known for keeping blood pressure in check, it is also packed with nutrients including B vitamins, magnesium and manganese – it features here raw, so you get the best out of it.

  • Half a Red Cabbage Thinly Sliced and Chopped
  • 5 Large Carrots Grated on a Large Setting
  • 1 Red Onion Finely Chopped
  • 3 Raw Beetroots Grated on the Large Setting
  • Salt and Pepper
  • For the dressing:
  • 2 Tbsp Balsamic Vinegar
  • 4 Tbsp Olive Oil
  • 1 Tsp Honey


Pop all the prepared ingredients into a bowl and mix together well.

Put all the dressing ingredients into a jar or something you can shake them up in. Shake well to mix and pour over the salad mixing in.
