Another addition to the overnight oats recipe collection! These apple overnight oats are comforting and a little spicy. An important note on oats: The oats you choose have an impact on your blood sugars. Unfortunately, the instant variety that you just add water to are more processed and contain less fibre, meaning they are digested quicker release sugar into the bloodstream quickly. Better choices are jumbo oats, steel-cut, stoneground oatmeal and rolled oats. The right oats keep you fuller longer, are packed with minerals and fibre.
Ingredients
- 2 Apples, cored and chopped up
- 1 Heaped tsp cinnamon
- 2 Tbsp water
- 1 Tsp Nutmeg
- 1 Tbsp Maple Syrup
- 200g Oats
- 200ml Almond Milk
- 50g Greek Yoghurt
- 1 Tsp vanilla extract
Instructions
Pop the apple, spices, water and maple syrup in a pan and cook on a medium heat until apples release some liquid and the flavours are combined well - about 10 mins. Meanwhile, pop the oats, almond milk, yoghurt, vanilla extract into a bowl and mix well. Once the apples are cooked, allow to cool and mix in well. Pop in the fridge and leave overnight. Enjoy the next morning with more yoghurt and/or fruit on top!
These oats will keep in the fridge for up to 5 days.
