Another addition to the overnight oats recipe collection! These apple overnight oats are comforting and a little spicy. A quick (but important) note on oats. The oats you choose have an impact on your blood sugars. Unfortunately, for those of you who like the instant variety that you just add water to, the truth is they are the low end of the healthy scale. They are more processed & contain less fibre which means they are digested quicker & raise blood sugar quickly. Better choices are jumbo oats, Irish oats, stoneground oatmeal & rolled oats. Bottom line is, the right oats keep you fuller longer, are packed with minerals and fibre.
- 2 Apples, cored and chopped up
- 1 Heaped tsp cinnamon
- 2 Tbsp water
- 1 Tsp Nutmeg
- 1 Tbsp Maple Syrup
- 200g Oats
- 200ml Almond Milk
- 50g Greek Yoghurt
- 1 Tsp vanilla extract
Pop the apple, spices, water and maple syrup in a pan and cook on a medium heat until apples are caramelised - about 15 mins. Meanwhile, pop the oats, almond milk, yoghurt, vanilla extract into a bowl and mix well. Once the apples are cooked, allow to cool and mix in well. Pop in the fridge and leave overnight. Enjoy the next morning with more yoghurt and/or fruit on top!
These oats will keep in the fridge for up to 5 days.
