This is a great combination of my pea and mint pesto recipe over some warm new potatoes, a fab side or cool as salad.
- 16 or so tasty new potatoes - the ones I love are Jersey Royals
- Pea and Mint pesto (see recipe link below)
- Olive oil
Cut the potatoes into bite size chunks.
Boil for 8-10 mins dependent on the size of your potatoes, you want them to be to bite.
Drain, freshen under the cold tap and pop back in the saucepan with a good drizzle of olive oil and a good pinch of salt to coat them.
