These are great to grab if you are on the go or before/after exercise. I came up with this recipe for my food retreats because it doesn’t need a blender so everyone could have a go with minimum hassle. You can start with the easy base recipe, then mix in any other things you like. You may need to add more nut butter/sweetener or hot water dependent upon how dry your mixture is. If you are a fan of Bounty bars – this is a fab healthy alternative!
- Energy Ball Base:
- 135g Good flaked or desiccated coconut
- 1 Tbsp sesame seeds
- 40g Almond butter
- 25g Sticky liquid sweetener of choice (agave,honey or maple syrup)
- Mix in:
- 1 Tbsp smashed pistachios
- Tbsp finely chopped dried apricots
Place all of the ingredients in a large mixing bowl and stir to combine, once thoroughly combined add some pressure to get it to start sticking together. If the mixture seems too wet, add more coconut, if it’s too dry, add a bit more nut butter, hot water or sticky sweetener. It should create a sticky mixture that holds together when lightly squeezed. Place the bowl in the refrigerator for 20 minutes to cool (this will make the balls easier to roll later on).
Remove the bowl from the refrigerator, wash your hands thoroughly and get stuck in! Portion into the desired size and use your hands to shape into balls.
Store energy balls in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
