This tasty pureed cauliflower and sweet potato side dish is flavourful and gets a few more veggies away at dinner time.

- 1 Stick of celery
- 2 Garlic cloves peeled and chopped
- Half a cauliflower
- 2 Sweet Potatoes
- A Little butter or olive oil (use olive oil for vegandish)
- Salt and Pepper
Instructions
Pre-heat the oven to 200°C. Fork the sweet potatoes and place in the oven on a 200°C for an hour to bake.
Meanwhile wash and chop the celery, remove the cauliflower stalk and separate the heads and pop in a pan of salted boiling water for 8 mins to soften.
Once the cauli and celery are softened drain them off and pop in a blender along with the butter or olive oil, garlic and a good dose of seasoning. Whizz up and set to one side. When the potatoes come out, halve them to check they are cooked through - they should almost fall out of their skin when they are ready- scoop the flesh out into the same bowl as the cauliflower mix and mash with a masher. Pop back in the oven to warm though while you finish preparing your meal.
