Breakfast is my favourite meal of the day. I tend to eat what I feel I need at the time and I try and vary it so I am getting a wide range of nutrients into my body.
Traditional bircher is muesli made up with cream and lemon juice and is eaten after all the ingredients have had time to soak. In this bricher recipe, I have used Kefir rather than cream, along with some other nutritious and delicious ingredients.
A note on Kefir: Kefir is a fermented milky yoghurt. It contains probiotic microbes that are good for gut health.
Ingredients
- 100g of Four-grain muesli base from Hodmedod or large steel cut oats
- 150ml Kefir (I use the pot from Yeo Valley)
- 50ml Lemon Juice
- 1 Tbsp Runny honey or agave
- 1 Tbsp Chia seeds
- Top with whatever you like, I used passion fruit and crushed almonds. Other ideas are strawberries and hazelnuts, or dried apricots and pumpkin seeds
Instructions
Simply mix all the ingredients (except toppings) together in a bowl, cover it and pop it in the fridge overnight. Pull it out the next morning, top it and enjoy!
