This cake is gorgeously rich and sticky. The polenta gives it a lovely nutty texture and you will love the zesty fruit flavours. I came up with this recipe in lockdown when I was in need of comfort. It certainly ticks the comfort box!
Line a round springform tin with parchment & heat the oven to a 180c. Using a mixer: Pop the almond, polenta & baking powder in a bowl and set aside. Whip up the butter and sugar to a light mixture, add an egg and whip again. When you add the second egg, add some of the polenta mix, whip again and do the same for the last egg. Try to avoid curdling the mixture. Add the remaining polenta mix along with the zest and mix together well. Place the mixture in the tin and bake in the oven for around 40 mins. When you take it out, it might seem a little wet in the middle but if it's coming away from the sides, it's done. Polenta based cakes do tend to sag a little in the middle but don't worry, it will still be delicious! Make a syrup by bringing the juice and icing sugar in a smallish saucepan to a simmer, cool slightly and pour over the cake in the tin on a plate. Leave to cool and enjoy!
