This alternative pesto tastes great with freshly boiled new potatoes or pasta. You will need a small blender to mix the ingredients.
- 75g Peas Blanched
- 5 or 6 Good size Fresh Mint Leaves,
- Good Slug of Quality Olive OIl
- Heaped Tbsp Pine Nuts - toasted lightly
- Salt and Pepper
- Parmesan - leave this out for dairy free/vegan.
Pop all the ingredients into a small blender and blend to a crumby paste. Smother over your freshly boiled, seasoned potatoes with an extra slug of olive oil. Bliss!
