This is lovely way to cook greens. Very simple, and the lemon and seasoning brings out the best in the cabbage. The key to cooking any veg is to keep a bite to it and avoid immersing in water wherever possible to maintain the nutritional value. Steaming, light frying, roasting and eating them raw are the best options.
- 1 Spring Cabbage sliced
- 1 Tbsp Olive Oil
- Squeeze of lemon juice
- Herbs - use whatever compliments your main dish
- Salt and Pepper
Pop your cabbage in a mixing bowl, season well and mix in the herbs (I use coriander and a little mint), drizzle a little oil over it and massage into the leaves. Gently heat a dash more oil in a large frying pan and place the cabbage into the pan and cook for about 10 -15 minutes until it’s just tender and still a little crunchy. Squeeze the lemon over to serve.
