This simple, healthy pesto is the perfect accompaniment to pasta. Walnuts are an excellent source of anti-inflammatory omega-3 essential fatty acids and antioxidants.
- 6 Walnuts
- 2 Tbsp Pine Nuts (Dry fried beforehand)
- 1/4 teaspoon salt
- 1 Clove Garlic
- A really good handful of Fresh Basil Leaves
- 3 Tbsp Good Quality Extra Virgin Olive Oil
- Tsp Grated Parmesan - leave out for a dairy free/vegan alternative
You will need a small blender to make this dish. Pop all the ingredients into the blender and whizz them up. Add more olive oil to loosen the mixture if needed. Enjoy!
