I came up with this on an early autumn evening when we had a vegan guest staying with us a Breathing Space. You can use any fruit you like, I used pears because a lovely neighbour had just harvested his and brought them round.

- 4 Cooking apples peeled, cored, sliced and stewed in 50ml water and either 50g caster sugar or coconut nectar
- 4 Conference Pears, cored and sliced and sprinkled with lemon juice
- A shake of cinnamon and nutmeg.
- For the topping:
- 120g Wholemeal Flour
- 50g Oats
- 100g Coconut Nectar
- 50g Chopped dates
- 75g Pecans
- 50g Mixed Nuts
- 75g Coconut oil
Instructions
Place the prepared fruits into the bottom of a rectangular baking dish, shake the cinnamon and nutmeg over them, mix them up, and set to one side.
Place all the ingredients for the topping into a blender and pulse blend them until you have a chunky breadcrumb like consistency. Once it is at that stage, take the blender bowl off and cover the fruit with the mixture spreading evenly to cover all the fruit.
Wrap the dish in foil and place in the over on a 180°C for 20 minutes. Then remove the foil and cook for a further 20 minutes until the topping is browning nicely. Serve with a little soya based yoghurt and some blueberries on the top.
